Calcium diglutamate, abbreviated as CDG, in English calcium diglutamate and also called calcium glutamate, is the calcium salt of glutamic acid. It is a chemical flavor enhancer and food additive (E number: E623) — it is the equivalent of monosodium glutamate (MSG).
Because glutamic acid is the natural form of the flavor enhancer and glutamate is the chemical, food additive, and flavor enhancer, CDG has the same taste-enhancing properties as MSG but without increasing the sodium load.
