Tartaric acid is a naturally occurring acid found in fruits such as figs, pineapples, or grapes. It is also known as "potassium acid salt."
Tartaric acid is generally industrially extracted from wine by-products: tartars and wine lees recovered from the bottom and walls of tanks. These winemaking residues are dried, purified, and rid of residual impurities. They are then transformed into a white, odorless powder with a slightly bitter taste: natural tartaric acid.
Applications:
- As an acidifier and flavor enhancer in candies, jellies, jams, ice creams, or fruit pastes.
- As a stabilizer and antioxidant in preserves of fruits, vegetables, meats, or fish. It also helps stabilize the pH, color, taste, and nutritional value of canned foods.
- As an additive in edible oils and fats to prevent rancidity due to its antioxidant effect.
- As a taste additive in carbonated beverages.
- As an emulsifier and preservative in the production of industrial bread and pastries.
