Sodium citrate is the sodium salt of citric acid (E330), a natural acid found in most fruits. On an industrial scale, it is produced by cultivating a fungus (Aspergillus niger) in a sugary nutrient solution. This compound is a commonly used acidity regulator in non-alcoholic refreshing beverages, such as sodas. It also prevents browning of food items and enhances the action of other antioxidants. While consumption may trigger allergic reactions in individuals sensitive to molds, such reactions are rare. There is also a concern that Aspergillus niger may produce mycotoxins. Additionally, dental damage attributed to this additive, especially in heavy soda consumers, is frequently highlighted, with particular caution for children.
