FUMARIC ACID appears in the form of a crystalline white powder that is odorless, combustible but weakly flammable, and slightly soluble in water. It has a flavor reminiscent of fruits. It is the trans isomer of maleic acid: its two carboxyl groups are in the E (trans) position, whereas those of maleic acid are in the Z (cis) position, making it more stable than the latter. Its salts and esters are called fumarates.
